60% Pilsner Malt 12 LB 32% Vienna Malt 6.4 LB 5% Flaked Barley 1 LB 3% Acidulated Malt 0.6 LB 12 gallon expected batch. Single step mash at 154°F, rest for 1 hour. Drain the wort, add boiling water to mash tun, temp at 165°F, and drain sparge wort and add to keggle, boil 60 min. Final volume 11.25 gallons at 1.052 OG. Cool overnight to 90°F, transfer to buckets and cool in fridge to 55°F. Aerate for approximately 5 min with an air stone, then pitch with lager yeast strain X yeast and approximately 2 gallons of Oktoberfest with 1.065 OG. Top off both buckets to 7 gallons each for a total of 14 gallons. Ferment at 50-55°F for 1 month.
