Sitting here creating... not sure at this point but will know more when I am done.. Input from wife and oldest son. We are building a paler beer here with ingredients on hand and pondering the addition of adjuncts? This is an all-grain 5 gal recipe..... So... final description comments... After compiling and tweaking this I decided on this very simple grain bill. The Weyermann Abbey Malt should add a nice biscuit/nutty malt profile. I went for a mellow hop profile and with the one ounce of US Saaz the bitterness is lower at 24.0 IBU. Fits the Maibock/Helles Bock or a Belgian Dubbel for judging. This should be an ass kicker!

    I can see why you're saying this will be an ass kicker. The Vienna is milder than 2-row and the abv will be higher than you'd expect. Nice. Leave a note to let us know how this one tastes!

    Haybrews... just sipping some of this for the first time. It has a rich amber/orange color, fruity aroma and is so smooth. Taste is smooth upfront with a nice malty profile and finishes nicely with a little kick. Bitterness could be kicked up a bit but its just about right for a session beer. I might move the 20 minute hop addition at the end to 10 to see if the Saaz will come through more. All in all.. I like it :D

    Check out Hopocolyptica.. Let me know your thoughts on the recipe.. Note the 1st hop addition at 30 min. Have you ever done this?

    I couldn't find Hopocolyptica, but I have always tried to get the most out of my bittering hops at beginning of boil, 90 or 60 minutes. Let me know if the 10 minute hop revision is better, but I'd probably toss an oz in at flameout. It wouldn't raise the IBU and would give that flavor a boost.

    Hopocolyptica is another one of my recipes..I haven't brewed this one with the late addition at 10 minutes. I would assume that it would change it just a bit. 1 oz at flame out would be lovely!! Whats cool about all of this is that each batch when changing things creates a difference that could be magical. I hope you brew this and add that oz at the end! Happy brewing!

    I looked up your Hopocolyptica recipe and saw I commented earlier on you hop schedule. My son (Adam-Leith on Brewgr) has a Zombie Dust clone that starts with a late addition and swears by it. I'm brewing my version of your Citra SMaSH today and my version of SingleSpeed's Hoppy Amber (Arragant Bastard clone). Next up will be my take on Dale's Pale Ale.
