I have used Weyermann\u0027s Abbey Malt before with good results with base Malts of Crisp Maris otter and Crisp Extra Pale Malt, with a touch of Chocolate Malt, never used Munich Malt in this combination. Hopefully it\u0027ll work out fine with Crisp Light Crystal Malt coming in with a bit of caramel and toffee flavour, Using local hops, may change hop bill in the future to get a good balanced Ale. Although I prefer Malty to Hoppy flavours. I put 1.5 Campden Tablets in to water with 3 Ml of Lactic Acid to lower the Ph.
