Special Instructions

Water chemistry: 1 tsp gypsum, 2 tsp calcium chloride, 0.5 tsp baking soda, pinch of magnesium and pickling salt

Pre-mash water set to pH = 5.9 with lactic acid and citric acid.

Note: Reverse step mash. 150 F -> 143 F -> 170F

Mash pH = 5.2
