Special Instructions

1.
mash for 60 in 4.5 gallons
2.
recirculate or vorloff for at least 10 m, drive the gellatinous sugars down
3.
fly sparge with a little over 2.5 gallons at 170 slowly (20 min)
4.
youll have about 5.25 to the kettle to boil
5.
add hops per schedule, please dont turn this into an IPA there are plenty of those recipies already

After boil youll have about 4 gallons
7.
remove from heat , add 1.25 gallons nearly freezing H20
8.
pour from kettle to fermenter from height to aerate repeat to kettle, then bakc
9.
temp should be right on for pitching yeast.
10.
this yeast can handle slightly higher temps but its not a saison, so control temps early keep fermenting in a room that is around 60
11.
after 10 days rack to 2ndary and ferment around 35-40 F
12.
requires bottle conditioning. I use tabs in 750 ML champagne style bottles. (go to the recycling center, there will be plenty)
13.
open, enjoy... talk about something Belgian... like self loathing, or great food, or kim clysters, or audrey hepburn
