I love brown ales! One thing I've noticed lacking from my Brown Ales is a bready or biscuity flavor. I've made mine nice and malty with great chocolate and nutty flavors, but I think I'll throw in some Victory Malt or Biscuit Malt next time.

Yes, and it was my first ever Brown Ale. I'd like to brew it again, and I want to try backing off the Chocolate malt, cut that in half down to 4 oz. Even though it scored perfect on appearance, it was almost black. I thought I'd get dinged on it.

I've made a lot of Browns...it's my favorite style. I think backing off on the Chocolate is a good idea. My last brew, Brown Bog ale, used 4oz, and I think I'd still back off a bit more, in favor of a little more Crystal 80 to darken. The chocolate adds a burnt bitterness I'm not fond of in Brown Ales. Very cool about the contest...makes me want to compete but I'm not sure I have any in my neck of the woods.
