Mash at 152F for 60 minutes

Add Dark Belgian Candi at flame out

Cool wort to 65F (fermentation is an exorgonic process)
4.
Ramp temp gradually by 1F until 70F is reached (or higher, depending on ester profile desired)
5.
Ferment primary for 3 weeks
6.
Prime and bottle, condition for 2 weeks/or age for a while
