Brewed Monday, March 9th OG 1.063-64 Mashed around 148-149*. Mash pH was 5.6 and same for sparge and then dropped down around 5.0 during the boil, though the pH reader was on the fritz, and it was hard to tell. The yield was only about 5 gallons. Pitched a large slurry of Harvest and a smaller slurry of Saflager 23. Pitched at 60* overnight as it cooled down to about 48* 12 hours later. Fermented around 50-52 for first few days, then 52-54 for a few more days (with gravity still around 1.030), then 54-56 for days 6-12. Bump up to 58-60 for days 12-13. Full on d-rest at ambient temps (62-64) for a few days before kegging around 3 weeks in. Kegged with finings o/a 3/31 and lagered for about 10 days, dropping down to 50 then 44* (as the fridge wouldn't go lower). Really cloudy at first. FG was 1.007-08, crazy attenuation. ~~~ Crazy attenuation - probably a mix of low mash temp and leaving at mid 60s for a few days while still active. Figured out while I was fermenting this that I didn't really love Augustiner/Harvest's profile. Pretty malty, not sure what I would do differently. More Munich? ~~ 7/24 tasting: recipe is about spot on, maybe use a different yeast and lager longer.
