*100% RO Strike with 3.4 (142F) gal to hit a 133F protein rest, add 1g CaSO4, 1g MgSo4, 1CaCl, and 2g NaCl. Hold for 15 minutes. Add 1.2 gal boiling H2O to hit 152F. Hold for 30 minutes. Mash pH calc'd@ 5.26. Remove one third of the mash, and perform a mash out decoction. Boil decoction for 20 minutes, add back to main mash. Hold for 10 minutes. Vorlauf and lauter. Add 1g CaSO4 and 1g CaCl to BK. Copper up to 7 gal, boil 90 minutes. KO as cold as possible. oxygenate wort, pitch yeast at 51F. Ferment at 51F.
