Special Instructions

1.
Sour beer for 2 days, no hops
2.
Boil for 1 hour with hop addition, add honey at flameout
3.
Ferment 3 days, then add 6 pounds of pureed apricots
4.
ferment 4 more days, rack liquid off the fruit
5.
Add 2 oz.oak cubes soaked in a little vodka and then soaked in chardonnay 1 week
6.
ferment one more week
7.
Bottle with 3.33 cups corn sugar
8.
current batch used 2.333 ounces oak cubes soak in vodka first, added Chardonnay later
