Special Instructions
1.After mash is done recirculate wort for 30 minutes
2.After 30 minute re-circulation transfer wort to brew kettle
3.Fill brew kettle to 16.5 barrels
4.This transfer can take 3 to 4 hours
5.Boil wort for 60 minutes
6.Once boil is done rest wort for 10 minutes
7.Then whirlpool the wort for 10 minutes
8.After the rest wort for 10 minutes
9.While wort is going through rest periods add yeast to fermentor
10.Transfer wort thru heat exchanger and aerate to fermentor
11.This will take 3 to 4 hours
12.Set temperature of fermentor to 68 F
13.Ferment at 68 F for 10 days
14.Turn temp down to 40 F after the 10 days for 4 days
15.Transfer beer after fermentation to bright tank
16.After transferring beer to bright tank add 40 ozs per gallon of Cooks Peach Extract to bright tank beer
17.Carbonate for 8 hrs to 2.50 volumes of CO2
18.Age beer for a week
19.After a week the beer can be served or kegged off
