Having not ever had a saison before we didn't know what to expect. Early on this beer had a very staged flavour profile, with initial fruitiness then a hot alcohol mid-stage followed by a bitter aftertaste. With time this mellowed and blended and became a much gentler, though still very complex, drink. Will definitely make this again.

This recipe was cloned from Damo Saison.
