Special Instructions

Initially fermented in mid 70's, then in 80's?

Fermented with tin foil on top of Iced Tea dispenser. Temp allowed to climb, and it seems the Brett got active as a pellicle had formed.

Split between 1 gallon for mixed fruit, 1/2 gallon for cascara, and 3 bottles

Mixed Fruit: frozen blend of blackberries, raspberries, and blueberries. No hop spider.

Mixed fruit showed obvious signs of fermentation. Cascara seemed to show no signs, though it could be an imperfect seal with the airlock.
6.
Cascara growler seems to have formed a kraussen and dropped it.

Bottles conditioning in mid to upper 70's?

Notes:

Tasted after leaving in the fridge for months. From memory, was very sour on first tasting. Tasting now, sourness is tamed and nice. I believe this side of the split batch received cascara tea and has a the same raisin-y fruitiness. The cascara makes the finish not bright. Crystal clear beer with a dark cherry tint.
