Special Instructions

1.
Heat 6.5 gallons of liquor to 154 degrees Fahrenheit.
2.
Add grain bag to water and perform Saccharification Rest for 75 minutes, stirring every 15 minutes and reheating water to 150 degrees as the water falls below 144 degrees.
3.
Bring water up to 165-168 degrees for 15 minute Mash-Out.
4.
Remove grain from water and bring it to a boil.
5.
As the water begins to boil, add 1 ounce of Williamette hops.
6.
After 35 minutes, add 1 ounce of Fuggles hops.
7.
After an additional 25 minutes, remove from heat and add 1 ounce of Hersbrucker hops.
8.
Cool rapidly to room temperature and pitch yeast.
9.
Ferment at 68 degrees Fahrenheit. Keep in primary for 28 days.
10.
Bottle. Bottle Condition at 68 degrees for 14 days.
11.
Sample and enjoy! Store bottles at 45 degrees between conditioning and consumption.
