1.On Flameout, let the Apollo Galaxy Soak for 20 mins before cooling
2.2 day diacetyl rest at final og. Rack to secondary, dry hop for 3 days in 2nd. Then cold crash to 2 degrees C for another three days before you transfer to keg.
3.Transfer to Keg, set to 2 degrees C. Set PSI to 2 bar but pressure dropped to 1 with CO2 in fridge, still perfect
4.Note: Mashed at 65 for 60 mins to get max fermentable sugars and let US05 come very clean. Mashed out at 72 for 10 mins.
