1.Source around 2kg of Brambles and prepare as if you were going to make jelly. So boil for around 30 mins till soft then sieve through fine filter. Store or freeze the liquid.
2.boil for 30 mins and cool the wheat and oats before mash
3.Boil 60 minutes adding hops according to regimen above
4.Add bramble liquid and wort chiller in last 10 minutes of boil. (all in a fine mesh hop bag)
5.Chill wort to 68F, aerate wort and pitch yeast
6.Ferment in primary at 63-68F /17-20C for 1 week or until head breaks
7.Rack to secondary at 63-68F /17-20C for 2 weeks
8.Prime with 4 oz/114g corn sugar and allow to carbonate for 2 weeks at 70F
