Mash Steps

Special Instructions

1.
Mash at 152-156F for 60 minutes.
2.
Mash out at 168F.

Boil for 60 minutes.

Add blackcurrants and maple syrup toward the end of the boil (10 minutes).

Steep the specialty (dark) grains separately, at 165-168 for 15 minutes. Grind finely and steep in grain bag. Combine with the wort prior to boiling. This process reduces bitterness by preventing tannin extraction.
6.
Ferment at 68F for 14 days.

    Sounds like a great brew.

    FYI, you can add maple syrup to the fermentables section (look for Maple Syrup under sugars). Also, if you know the potential yield of black currants, you can add them as a custom fermentable and enter the Ppg.

    Hey thanks for the advice @ctorx, I made the changes to the recipe using the average ppg for US Blackcurrants and it bumped the OG to 1.063! Brewing this tomorrow, I'll update with how it goes.

    @SingleSpeed, didn't realize I had the recipe adding the specialty grains after the boil. I'm actually planning to do a separate shorter steep, then add the steeped liquid to the boil (without the solids). I've modified the recipe!
