Mash Steps

Special Instructions

1.
Heat strike water 6.5 GAL to 165 F
2.
Preheat mash kettle with 3 GAL hot water, then discard
3.
Pour 5 GAL strike water into mash tun
4.
Stir in grain, break up dough balls
5.
Adjust mash temp to 154 F (148 to 158, never 168 F!)
6.
Mash covered for 60 MIN, stir every 20 minutes
7.
While mashing, heat 3 GAL sparge water
8.
Recirculate 2 to 4 QTS mash water until clear (Vorlauf)
9.
Slowly drain mash water into boil kettle (~13.5 QTS or >3.5 GAL)
10.
Sparge ~11 QTS (<2.75 GAL) water at 165 F (never 175 F!)
11.
Stir, rest for 15 minutes, reset grain bed, recirculate
12.
Slowly drain off second running to yield 24 QTS (6 GAL) wort
13.
Measure SG, take L2D (eg 1.024 L2D = 24)
14.
Calculate efficiency = L2D / 148
15.
Boil wort uncovered for 5 MIN
16.
Add 0.66 OZ Dave's wild hops at 60 MIN
17.
Mix up Star San and sanitize all equipment
18.
Hydrate Yeast as per instructions
19.
Add 0.34 OZ Dave's wild hops at 17 MIN
20.
CHILL wort down to 68 F
21.
Siphon wort into carboy and swish it around for oxygen
22.
Put into fermentation chamber set to 68 overnight to cool
23.
Activate and pitch yeast
24.
Put airlock on carboy and put into chamber set to 68 F
