1.Bake potatoes for 25 minutes at 400F or until lightly caramelized. Puree potatoes with water.
2.Mash all of the grains and puree potatoes at 154F for 60 minutes then sparge. Collect roughly 6 gallons of wort.
3.Once boiling, add 0.5 oz of Cascade hops, 0.5 oz of Goldings hops, 1 tbsp Allspice, 1 tbsp Cinnamon, 1 tbsp Nutmeg, and 2 vanilla bean sticks. Allow them to boil for the full 60 minutes.
4.With 20 minutes left in the boil add honey and candi syrup.
5.With 10 minutes left in the boil add 0.5 oz of Cascade hops, 0.5 oz of Fuggle hops, and 1 Whirlfloc Tablets.
6.Cool your wort about 75F and strain the wort in to your fermenter.
7.Once the wort is both aerated and cooled, pitch the yeast.
8.Added American Oak chips to fermenter.
9.This beer should reach maturation in 3 to 6 months and ready for bottling.
