trying this one as a hoppier cream ale to use up some homegrown hops before they turn bad in the fridge. Got really poor conversion (iodine test showed black even after nearly 2 hours in mash tun). had to add .5 lb sugar to bring up OG to minimal level. hope this ferments dry (sat for 2 hours at 149)

Mash Steps

Special Instructions

1.
Mash at 151 for 90 minutes or longer (overnight okay)
2.
Raise to 170 and sparge until 7 gallons collected in kettle.
3.
Bring first runnings to boil while collecting sparge runnings
4.
Ferment 14 days at 65-68 degrees, cold crash, then rack to secondary or keg
5.
condition at low room temperature for 1-2 months,
6.
Cold age for 2-6 weeks minimum; preferably 2 months (35-40F)

Notes:

tastes like beer! that was the comment from one taster during the MMA viewing session. was good, but not great. not sure the kolsch yeast mixes well with this hops profile?? it's okay, but, i'd go back to my basic version of this recipe if I were to do again (use Saaz and a little centennial or cascade at the very end only).
