All Grain Oud Bruin homebrew recipe. This homebrew recipe uses the following ingredients: Pilsner - US, White Wheat - US, Spelt Malt - DE, Rolled Oats - US, Torrified Wheat - US, Aromatic Malt - US, Pale Chocolate - UK, Carafa III - DE, Mosaic Hops, White Labs WLP644 Sacch "Bruxellensis" Trois Homebrew Yeast, White Labs WLP650 Brett Bruxellensis Homebrew Yeast, White Labs WLP653 Brett Lambicus Homebrew Yeast, White Labs WLP677 Lactobacillus Delbrueckii Homebrew Yeast.
Roughly 3-4 gal pulled from barrel and kegged. Brewed OG 1.076 / BRIX 18.4 / 38 IBU batch at roughly 9 gal output, added 2 packs Bootleg MTF Funklandia 2018 mix, and filled barrel to brim. That should bring barrel mix IBU to 10-15. Remainder (~4 gal) put in glass carboy and fermented separately w/dregs from White Rooster, Scratch, Side Project, and Funk Factory.
Low-fermentable/high-SRM top-off batch brewed 8/13. Roughly 3 gal yield at BRIX 18.5, OG 1.077. Still 1 or 2 gal of head space left in barrel. 2 vials of WLP677 and dregs from Oceanside Ale Works "Up a Kriek" added. Sample was tart fruit with little whiskey/oak character.
Initial brewing of highly fermentable batches (1 and 2) completed 7/28. Exact measurement of output volume not measured, but aim was 12 gal @ 1.062 OG. Inoculated w/WLP644 Sacch Trois (included roughly 1 gal of fermented wort - unable to decant any further without losing visible yeast), dropping OG of full batch to 1.061 (BRIX 15). Visible signs of strong fermentation within 2 hours of inoculation. Added WLP650/653 Brett same day to build yeast population.
