Notes:

Moved to cold crash 7/17. Eric said the cinnamon came through just as heavily as the oak, but I barely noticed it. There's a mellow coconut flavor that comes in just at the tail end, and that could stand to be stronger. We'll save any decisions until after tasting the final product, but I'd move for not using fresh coconut (didn't yield much or toast well) and using more coconut flakes for the next coconut beer.

Oak chips and 2 crushed cinnamon sticks (all soaked in dark rum) added to secondary 7/12.

Added another 5oz of toasted coconut flakes.

Notes:

Toasted flesh from 3 fresh coconuts and added to secondary. Also boiled down water from coconuts, added 3/4 tsp cinnamon and 2 splashes vanilla extract, and added that mixture to secondary.

Notes:

Despite more than 2 gal of headspace, the krausen breached the airlock. Remaining volume after spill over was 3.75 gal at 1.092 OG / 22.0 BRIX. Added 1 gal water. New readings are 4.75 gal at 1.073 OG / 17.7 BRIX.

Notes:

Brewed 7/1/18. 3.9 gal yield (boil-overs and long boil) at 1.092 OG / 22.0 BRIX. Forgot to add 60 min hops, so switched from original plan of 3 additions to two additions at 30 and 10 min.
