Mash Steps

Special Instructions

1.
Treat the water 50/50 RO. Keep all additions underneath 150ppm.
2.
Mash all grains at 159F for 60 minutes
3.
1oz Hallertau hops at 60 mins
4.
Split into 2 carboys; 1. pitch both yeast and bugs. 2. pitch just yeast
5.
Ferment at 65 until primary fermentation is complete
6.
After primary add boiled and drained white-wine soaked french oak cubes into two carboys and add roeselare in carboy 2
7.
condition at 65 for 10 months or until desired acidity is reached. Add bottle
8.
Add Sour Cherries in one carboy & berries in another. Let sit for two months or until desired flavor is reached.
9.
Carb with wine yeast to 2.2 volumes of co2
