    Why did you cut back on the chocolate malt? I would think more would give better flavor. Because of the wheat?

    I found with my first go I got a strong coffee/bitter chocolate flavor. Not bad by any means but I'm hoping to create something a little easier to drink with more of a smooth and creamy mouthfeel. I might make that first stout again although I'd likely add some vanilla bean to accentuate the chocolate over the coffee flavor. Who knows where this recipe will end up :-p

    I added 2 vanilla beans in Big Wood Porter and it DID help accent the chocolate flavor of the pale chocolate malt. Let me know how this one turns out, it looks pretty good

    Nice! Yeah that's what I was thinking. I'll probably morph my original recipe into a chocolate stout and then continue on my oatmeal stout hunt. Not sure when my next brew will be for this one as I still have more than half of my stout from this brew left but I'll let you know how it goes!

    A good oatmeal stout kit that I did years ago was Samuel Smith Oatmeal stout clone from Austin Homebrew supply. Did it twice but now like my recipes better
