Special Instructions

Mash at 151 for 75 minutes

Raise to 170 and sparge until 7.25 gallons collected in kettle.

Bring first runnings to boil while collecting sparge runnings

Ferment 4-5 days at 55-60 degrees, raise 65-70F for 14-20 days
5.
condition at room temperature for 1-2 months,cold crash, then rack to keg
6.
Cold age for 2-6 weeks minimum (35-45F)

Notes:

The positives: Very smooth, creamy brew, with amazing head retention. Now, here's the problem: kolsch flavoring is completely gone...what's left...Fresh, slight citrus aroma, but has a slight bitter start aftertaste which is surprising given the low AA hops used (cascade) for bittering. I'd recommend going back to the original saaz-hopped recipe. I won't brew this version again and would put this on par with something like cream of three crops...ok, but nothing special. I suspect it will mellow and improve with a couple weeks of cold aging.

Notes:

tastes like a kolsch at bottling time. starts bitter, but has the kolsch German flavor with slight sweet finish. solid all around beer.
