Special Instructions
1.Ferment in primary at 55F to 60F for 7 days. Add cherry juice toward end of primary.
2.Zest peel from 2 oranges, puree frozen berries, and add cardamom to secondary.
3.Ferment in secondary for 7 days at 55F to 60F.
4.Ferment in secondary for additional 7 days at 38F to 40F.
The beer finished dry; could use a little more residual sugar by using T-58 rather than Abbaye yeast. Would probably be better with 1/2 to 3/4 of fruit content and without the dark grains. Also would be interesting as a little sour, e.g., use 1 gallon of sour cherry juice rather than add puree.
