Mash Steps

One gallon of water
Direct Heat
155

Special Instructions

1.
Bring two gallons of water for steeping to 155 degrees
2.
Remove from heat
3.
Put in brew bag and add grains and salts
4.
Mix completely to avoid dry pockets
5.
Stir in one tsp of cinnamon (anti-oxident)
6.
Cover and let stand for 30 minutes
7.
Rinse grains with one gallon of hot water
8.
Squeeze grain bag with pot tops to extract max sugars
9.
Discard grains
10.
Add additional water to kettle leaving room for extract
11.
Bring to boil and remove from heat to add extract
12.
Bring mixture back to boil and begin hop schedule
13.
Boil wort for 5 minutes
14.
Add 1 ounce styrian golding ("A")
15.
Boil for 40 minutes
16.
Add 1 ounce Mt. Hood ("B")
17.
Add 1 tsp of Irish Moss / 5 gallons of wort
18.
Boil for 15 minutes
19.
Turn off heat (flameout)
20.
Add .75 ounce bitter orange peel
21.
Add .75 ounce coriander
22.
Add .5 ounce chamomile
23.
Add .5 tsp grains of paradise
24.
Cool wort to 70 degrees within 30 minutes
25.
Take hydrometer reading (target OG: 1.048)
26.
Add water to reach 5 gallon mark
27.
Pour wort into fermenter
28.
Pitch White Labs Clarity firm
29.
Pitch dry yeast
30.
Stir gently
31.
Seal fermenter and ferment at 67 degrees for 14 days
