With my CHUH-nook IPA brew day going so poorly, I'm inspired to brew the beer again, but want to make some changes after reading some literature. Grains: Pale ale malt (thinking either Pure Gold again or Northwest) for color/flavor, 3% Victory for biscuit flavor and to cut sweetness, and 3% honey for flavor to accentuate the hops. Hops: Heavy on Chinook, with the hop schedule identified by Breakside brewing in The Secrets of Master Brewers. I may dry hop with Simcoe cryo hops this time rather than add it to the bottling bucket, not sure yet. Perhaps I will dry hop with 0.75 ounces and use 0.25oz in the bottling bucket on half the beer. Yeast: Denny's Favorite as I have it on hand. Water profile is: Ca 100ppm, Mg 8ppm, Na 40ppm, SO4 200ppm, Cl 50ppm, HCO3 20ppm

Notes:

Pours orange/caramel color with half a finger of foam that lingers. Aroma is malty sweetness and tropical fruit, mango. Flavor is malty sweetness and light tropical fruit with a very light, boozy finish that carries some of the Chinook bitterness on it. Body is on the heavier side and carbonation is spot on. Simcoe hops are the most apparent flavor and dominate the beer, especially compared to the Chinook. Not a bad pale ale, but it's not one that I would make again as it comes across with a sort of candy sweetness.
