Mash at 156*F for 60 min

60 min boil or enough to hit post-boil volume and target IBU

Primary ferment with WY2112 pitch at 70*F for 14 days

Secondary condition with WY3278 & WY5526 pitch 65-70*F until desired sourness achieved
5.
Remove 1/3 portion with fresh wort yearly
6.
Add 3oz burgundy soaked oak cubes to aged beer in Tertiary
