Special Instructions

1.
Mash at 152 for 75 minutes.
2.
Sparge and transfer wort to boil kettle. Bring to boil, add chiller, and hold for 15 minutes. Cut heat and pre-acidify wort with lactic acid.
3.
Cool to 100F. Add 1mL at a time and check pH until pH is between 4.0 and 4.4
4.
Pitch Wyeast 5335. Let sit overnight. Check PH next day and taste to verify sourness.
5.
Once beer is sour enough, bring wort to boil for 90 minutes. Proceed with boil as normal.
6.
Chill to pitching temp and pitch Wyeast 1056. Ferment for 2 weeks
