Is this a blonde, a rye, or a kolsch? There's only one way to find out: brew it, try it and you be the judge. The original definitely had a kolsch quality to it. But this version was adapted to brew in warmer summer months with traditional Ale yeast. With low mash temps and warmer fermentation, this should dry out toward the kolsch levels, but have an ale quality. If left to finish and clarify in bright tank or fermenter, can approximate a lager quality without true laggering effort. Not too much hop aroma with minimal bitterness.

Special Instructions

1.
prepare a yeast starter to ensure rapid fermentation
2.
treat tap water with 1/4 campden tablet per 5 gals strike/sparge water
3.
Sparge with 170-180F until 7.2 gallons collected in kettle.
4.
boil for 90 minutes, begin hop schedule at 60 minutes
5.
Ferment 14-21 days starting at low 60's, raising to 70F around 4th day
6.
Rest around 70F at least 2 weeks in fermenter
7.
cold crash and bottle or keg, condition below 40F for 14-21 days
8.
carbonate at 2.7 vol

Notes:

Great balance of base malt with just enough hops to add flavor and minimal aroma. Smells bready sweet, minimal grassy notes. dark straw color. picked up a hint of rye, but not overpowering...added just enough variety to spice up an otherwise basic light malt base. Shared at a party with a variety of taste preferences and all liked the flavor as it appealed to both craft drinkers and basic beer drinkers alike. I'd personally rate this a 5 star if it had a bit more hops complexity, but maybe that's just me. Definitely would brew again exactly the same and consider a staple for the draft rotation.

Notes:

Great summer brew. The rye adds just enough flavor variation to differentiate from a standard cream ale. Very clean and will appeal to the non-hop heads but please craft beer drinkers too. No hop aroma and mild bitterness. Can smell some malty swetness even with the relatively low fg. Would brew this for the tap rotation or to share at a general public event. I recommend increasing carbonation to 2.7 vols.

Notes:

Tasted while taking initial FG reading from the fermenter. Very mild, no bitterness, still cloudy. Amazing difference using 05 yeast compared to the kolsch yeast. had a pronounced alcohol odor (not surprisinng for a green stage 5.6 ABV brew) with NO hop aroma. I expect this to finish with less flavor complexity than the original recipe more toward a light blonde ale or mild cream ale.
