This adaptation of my EZ Galactic Sipper is somewhat of a misnomer, because my homebrew supply store no longer has Galaxy hops. I like the tropical fruitiness of the Australia and New Zealand hops (like Galaxy), so I'm replacing the Galaxy with Australian Summer hops for aroma and Australian Topaz hops for bitterness. I'm also ramping it up a bit, using good Trappist ale yeast to take on a higher gravity than I typically aim for. I'm excited about brewing this one. And I plan to prime the bottles with dextrose, because trying to prime the last brew with agave nectar was a bad choice.

Notes:

Pours a deep amber color with a tiny head that dissipates quickly. Almost all the sediment stays in the bottle, which is nice. This beer has a very strong Belgian smell: Mostly alcohol, with a bit of caramel maltiness. The flavor, again, is very much like a strong Belgian ale. There's a bit of astringency to it that other tasters say they don't notice, but it gives me an itchy burning in the back of my throat that I've never experienced before. It's not pleasant, but it has faded the more it has aged (and, as I said, other people say they don't get that). Overall, a decent Belgian dubbel.
