Special Instructions

1.
Yeast starter. Aerated with O2 X 1 min (20 sec X 3).

combo oak, American med toast & French med-plus toast, soaked in Bourbon X 2 weeks.
3.
3 weeks in primary and 7 weeks in secondary.

cinnamon in at 10 min.
5.
We hit the OG, but FG came out 1.012. I'm sure, in part, due to the 90 proof W.L. Weller Special Reserve Bourbon.

Notes:

One of the best we've ever brewed! 2 weeks in primary, 2 months in secondary, and now 2 months in keg. Aged 4 months, even better! Chocolaty, malty, thick and semisweet. The bourbon aroma and flavor is much less now, more in the background. It tastes so good, but the 9.1% ABV kicks my butt. I gotta brew this again soon, but with less ABV.

Notes:

This is near epic beer. I will do this one again and again. Dark and almost completely opaque. The aroma and taste is toasty, chocolaty, bourbon. Malty but not too sweet. Mouthfeel is thick and smooth with slight alcohol tingle on the tongue. At 9.1% ABV, it is surprisingly easy to drink. It will get you groggy real quick if you're not careful. I bet this one will be even better with more aging. Next time I would like to have the ABV 7.8 to 8.2%. Less bourbon.
