1st wort addition: 7g (.25oz) aged galaxy hops.

Mash pH: 5.4 (target was 5.5)

Pitch belgian ale yeast.

2 weeks: pitch brett cultures.

8-12 weeks: add lactic acid bacteria culture.

Flush with CO2.

Notes:

Prebottling notes from the carboy. Appearance: Blonde with amber and orange wine like hues. Clear. Particles of broken pellicle. Aroma: an initial apple aroma blows off revealing medium brett funk underneath. A little horse blanket, but not unpleasant. There is a present minerality that reminds me of pencil shavings. Undertones of spice and stewed apple and apricot fruit. Mouthfeel: lean with a tender richness that is probably from some lingering proteins. There is a nice present acidity forming that dances around the beer's minerality.

Notes:

[cont'd] Palette: The spruce and spice up front with fruit and funk lingering underneath. Finishes out with that apple note, a subtle lemon and lactic acidity and ongoing minerals. Drinkability and notes: lean and enjoyable. Hope the brett comes around and cleans things up a bit. Not sure if some of the funk is from a small amount of oxygen intake. Changes for next time: overall very pleased. Would like to work on getting cleaner brett character, but should wait to see how everything develops before making the call.
