my take on the popular Cream of Three Crops recipe. can use US05 or nottingham yeast, whichever is on hand. For a twist, try kolsch yeast which may leave a slightly higher FG (mash at 149 when using kolsch and lower fermentation temps). Can substitute minute rice for flaked rice.
Here's the "rotating' part of the recipe name: Alternate Hops ideas: Try rotating combinations of crystal, willamette, mt. hood and galena. E.g., use crystal & Willamette at 60 or mt. hood at 30 min or galena at 15 with willamette at 60 if can't find crystal hops. Galena will add a slightly stronger and more traditional cream ale flavor and aroma profile. Note: all hop addition options are .5 oz. with 1 total oz required of two different varieties. Aim for 17-19 IBUs.
To spice this up: add 6 jalepenos (sliced/roasted at 350 for 20 mins) at final 15 mins of boil. optional 4 more roasted peppers in secondary (soaked in vodka overnight). Increase IBUs to 24-28's if adding Jalepenos.

1.mash at 151 for 90 minutes
2.leave in primary for 3-4 weeks at 68F, cold crash and rack to keg or bottle.
22.carbonate to 2.5 vols and cold age for at least 2 weeks before serving.
Much better after son time cold aging. No need to brew again though. Better alternatives out there. Would do a later addition hop instead of so much bittering
slightly bitter, classic "c hops" flavor. Lost the 'sazz-like' flavoring I picked up at packaging time. minimal head retention with no lacing. light yellow coloring with slight haziness. would not brew this again in favor of one of the pilsner or kolsch recipes I've been perfecting.
sampled when finished fermenting and cleared in carboy. ready for packaging any time now. light, bright golden yellow color. very clear. surprisingly bitter finish, with a saaz-like start. not my favorite brew. We'll see if it mellows with some cold keg conditioning.
