technically a kolsch-like blonde ale: adapted from Blonde Kolsch on Rye: lowered ABV by reducing Pilsen Malt. Swapped out Hallertau for Spalt. Added munich instead of vienna to increase SRM. Should be similar, yet darker, milder version.

Special Instructions

1.
prepare a yeast starter to ensure rapid fermentation at cool end of temp range
2.
Mash at 149 for 90 minutes (or start at 151 and leave overnight)
3.
Sparge with 170-180F until 7.2 gallons collected in kettle.
4.
boil for 90 minutes, begin hop schedule at 60 minutes
5.
Ferment 14-21 days at low 60's,
6.
cold crash and rack to secondary or keg at mid 60's F for 14-21 days
7.
carbonate at 2.7 vol

Notes:

Best beer I've made. Clean and crisp. Not too much happiness, but enough to add interest to this lighter style brew. Beautiful golden color.

Notes:

This one's a keeper for the tap rotation. solid german kolsch flavor, minimal spicy character. Even has an ever-so slight stella taste to it, but a bit more character and mouthfeel. dark golden straw color with slight head retention. should please a variety of taste buds.

Notes:

tastes like a lighter version of the blonde kolsch on Rye after finishing primary fermentation. Not as spicy or strong alcohol, although has a slightly "hot" finish. Still picking up the rye. Should mellow nicely after some cold aging and carbonation.
