Mash Steps

Special Instructions

1.
Heat 42 qts of water to 164 F
2.
Mash in Base malts, wheat malt, caramunich, crystal 140 and Special B
3.
Mash temp should be 151 F
4.
Add brewing salts to mash; 3g of baking soda and 2.5g of calcium chloride
5.
Mash grains for 60 minutes.
6.
Heat 10 qts of water to 154 F.
7.
Steep roasted barleys and chocolate malts for 30 minutes.
8.
Sparge specialty grains with 1.5 gallons of 154 F water
9.
Heat 8.5 gallons of water for sparging
10.
Lauter mash after 60 minutes and begin sparging to achieve total boil volume of 14.5 gallons.
11.
Total boil time will be 60 minutes.
12.
Add 2oz of Horizon and 2oz of Magnum hops at beginning of boil.
13.
Add 1lb of table sugar and 1 lb of corn sugar at 30 minutes
14.
Add 2oz of Willamette hops at 15 minutes
15.
Add 2oz of Willamette hops at 5 minutes
16.
At end of boil, cool wort down to pitching temp, around 70-75 degrees
17.
Pour excess wort from 2 gallon starter and pitch slurry into cooled wort
