Special Instructions

1.
Heat 3 gal of water to 155 degrees (1.25 qts/lb of grain)
2.
Remove from heat
3.
Add 1 teaspoon of Cinnamon (anti-oxident) to water
4.
Add 1 teaspoon of Calcium Chloride to water
5.
Put in brew bag and moisten all grains
6.
Let steep for 30 minutes
7.
Pour "tea" into boil kettle
8.
Rinse another 2 gal of warm water through the grains
9.
Squeeze brew bag with pot tops to extract maximum sugars
10.
Let grains drain in separate pot and that to boil pot
11.
Fill boil pot to 10.5 gal mark (allowing for 3 gal of extract)
12.
Bring to boil
13.
Remove from heat and add extract
14.
Stir pot while pouring in extract
15.
After extract is dissolved then bring pot back to a boil
16.
After boiling for 5 min add hop schedule A (1.5 oz Liberty)
17.
Continue boiling for 40 minutes
18.
Then add hop schedule B (0.5 oz Liberty)
19.
Continue boiling for 15 minutes then turn off heat (flame out)
20.
Cool wort to 75 degrees within 30 minutes
21.
Take OG hydrometer reading
22.
Transfer wort into 2 5-gal fermenting buckets (top off)
23.
Stir wort vigorously to add oxygen
24.
Pitch 1 dry yeast packet into each 5-gal fermenter
25.
Pour in 1 vial of White Labs Clarity Firm into each fermenter
26.
Stir gently then seal each fermenter
