Note: There are two Saaz hops listed. One with 5.3 Alpha acid and the second with an 8.1 Alpha acid. This was not intended, but that's what I received. I simply asked for 2 oz. at my local brew store and the packages were identified as such. I didn't realize a particular hops had such a wide span of Alpha Acid.
I brewed this recipe and aside from getting some tannins from too high sparge temperature, the brew is outstanding. I did a single infusion mash and a batch sparge. However, the sparge was too hot.

1.Add 172 degree strike water to mash tun along with grain. Check pH. Add gypsum as needed to achieve 5.2 - 5.7 pH
2.add 1 tsp irish moss 10 minutes before the end of the boil.
