Special Instructions
1.Crush the grains and definitely remember to mix in the rice hulls or expect a stuck mash
2.Mash between 148 and 150 degrees F and collect 6.75 gallons
3.Boil for 90 minutes with first hop addition at 60 min before end of boil
4.Add 60 min 2nd hop addition at 20 min before end of boil
5.5 to 10 min before end of boil, add grapefruit zest
6.Add last hop addition 5 min before end of boil
7.Re-hydrate dry yeast with one cup of sanitized water
8.Cool wort to between 70 and 75 degrees F
9.With wort in fermenter, add re-hydrated yeast
10.Let ferment for 3 weeks between 65 and 75 degrees, higher temps will get more of banana taste while cooler temps will get more of clover taste
