Mashing at higher temp as well to increase body and sweetness from original recipe. Hop profile remains largely in tact, although removing minor late addition aroma (willamette). Tried using just the Nottingham for the full ferment the first brew session since no true Saison yeast was available on brew day.
plastic flavor completely gone. actually a good beer after several months aging in the bottle. would consider brewing again, but will plan on extended bottle conditioning.
much better flavor after a couple months mellowing in the bottle. plastic flavor has diminished (nearly gone). Has a mild sweetness to balance the hops.
strange plastic flavor still hanging on. surprised how dark this beer turned out. I don't care for this recipe. not on my "do again" list. Maybe would try next time with some changes: remove the corn, less Munich, and use true saison yeast per recipe.
First bottle tasted after two weeks bottle conditioning and getting to full carbonation. Not happy with the flavor. Has a plastic aftertaste. Won't be replicating this recipe again. Not sure if it's the munich or just too much saaz at 60 minutes for the grain profile. It had so much promise in the fermenter, but didn't play through. Hopefully it mellows after more bottle conditioning. Maybe it needs more carbonation or time to mellow.
Official FG taken with calibrated refractometer (and checked with hydrometer) came in at 1.006. ABV ended at 5.8. A bit of sweetness remains. Has a classic "beer" taste: clean and refreshing, not hoppy or bitter. This should be a recipe for the masses balanced well enough to please the craft brew crew as well as those who prefer the lighter fare.
Snagged a quick taste while taking a gravity reading with new refractometer (got 1.005). ABV at 5.9. Sweeter flavor than previous batches with similar recipes. Munich comes through just right. Should be a nice summer brew, albeit not as spicy as a true saison should be.

I might need to get one of those fancy gadgets... I'm reading around 1.007 or 08 on mine... Not sure if that has to do with the fact that I had more trub?

I'll check mine again when I bottle this weekend using both hydrometer and refractometer to compare results.

Got 1.006 on both instruments.

Sweet! Mine should have stayed in the Carboy longer....
