After kicking this keg, I have decided that this yeast strain fermented around 75F would do nicely in an american wheat beer, with estery spicy flavor like a Hefeweizen.
Turned out well. Nice pineappley hop character. Very estery, (bannana, cherries.) The ester flavor tastes good, not cloying but also probably too much for the style. Fermentation temp got as high as 76, so definately ferment lower next time. All and all, perfectly palatable!
