A bolder version of Macbrew light. Stronger Ale cloning pilsner style as it uses an ale yeast and can be fermented at typical 65-68 degree ale temps. Add Amylase Enzyme during secondary: should increase clarity and boost ABV (lowering FG) above 5.5 with reasonable efficiency.

Special Instructions

1.
Mash at 149 for 60 minutes
2.
Raise to 170 and sparge until 14 gallons collected in kettle.
3.
Ferment 7-10 days at 68 degrees, rack to secondary for 7-14 days
4.
Add amylase enzyme during secondary to clarify and boost ABV

Notes:

this brew gets better with age! Nice standard, crisp beer with just a bit of hops. Consider adjusting per notes below and brewing in Winter to give time to age so it's ready to take on on Spring camping trip.

Notes:

next time, reduce saaz hops early and use strictly late in the boil. Consider halving the carapils and upping the Crystal to add a bit more color.

Notes:

achieved the balance of hops I was hoping for. Did turn out drier than I hoped but overall much better than the cream ale that was a bit lighter flavored even though technically slightly stronger.

Notes:

Really surprise how well this turned out. Actually has some mildly sweet after notes. Great flavor for a lighter style brew. Next time I'll try with more two row instead of sugar, and some 20L instead of 10L. I think i'll just cascade and saaz each at 60 and 15 to increase IBUs slightly.

Notes:

Got a sample while racking to secondary. Very clean taste with just the flavor I was looking for, albeit a bit lighter. Added ae, should be a very dry beer.
