I was not completely satisfied with my 1st brew so I completely changed it. The cake thing thru me off. So I have revamped it after studying irish red beer history and I hope this is closer to the red taste I was looking for. Brewing tomorrow so I will keep you updated.

2.add 4 gal of water @ 163f to get 152.5f. appx.Mash 1 hr.
3.Sparge 4.5 gal water @ 180f to get 165.5f. Mash 15 min.
4.Should have appx. 6.5 gal of wort. Heat till boil 60min.
5.1st sign of boil add 1oz of KG hops(goldings)60 min.
6.Irish Moss 15min.
7.1oz. Cascades 5min.
8.cool wort to 78f pitch yeast.
9.Fermentation 1 week.
10.2nd Fermentation 1 week
11.Bottle condition 1 week

I'm looking for a good Irish Red. How did this rev compare to your 1st recipe? Did you get a better color and flavor? I notice you changed your Irish yeast from WLP004.

Also, I think I'd like your change to Cascade as the bittering hop.

The color is a little richer and flavor is definitely more towards a red. I think the Maris otter was a good change. The yeast I changed mostly due to the problem with my 1st brew with the floating cake. It was crazy because every one I talked to had never seen it.
