Special Instructions

1.
8.5 gal H2O, 2.0 g gypsum, 3.0 g calcium chloride, 0.2 g magnesium, 1.0 g NaHCO3
2.
Ascorbic acid to drop brewing water to pH of 6.0. Mid mash pH should be 5.3.
3.
Mash at 142 F for 20 minutes then pull a third of the thick mash and decoct for 20 minutes.
4.
Return decoction back to mash and hold at 152 F for 20 minutes.
5.
Mash out at 170 F for 10 minutes.
