Mash Steps

Special Instructions

1.
Create Yeast started a day or two out from brew day.
2.
Heat 14.13 qts of water to 167.6F and add water into mash tun.
3.
Stir in your 10.8 lbs of grain while stiring to make sure of no dough balls. Mash temp should be 156F after adding in grains.
4.
Let sit for 60 minutes.
5.
About 20 minutes out start heating 2.08 gallon of water to 168F.
6.
After 60 minutes check for starch conversion.
7.
Clear wart with run off and then drain into boil pot.
8.
After drain is complete, add in the 2.08 gallons of heated water to the mash tun while stirring.
9.
Add top to mash tun and let sit for 30 minutes.
10.
While mash is sitting, boil another 2.08 gallons of water to 168F.
11.
After the 30 minutes is up clear the mash and drain.
12.
Add the 2.08 gallon of water and let sit for another 30 minutes. (This step can be added with the one above if your equipment can hold the 4+ gallon of water in the mash tun with the wet grains)
13.
After 30 minutes clear and then drain.
14.
Bring the wart to a boil.
15.
After hot break add in East Kent Goldings and boil for 60 minutes.
16.
At 15 minute mark add Fuggles.
17.
At 5 minutes add spalt and yeat nutrients.
18.
Cool to 68F and add yeast starter.
19.
Primary for 4-5 days at 72F.
20.
Transfer to secondary for 10 days at 72F.
21.
Bottle and condition for 30 days at 68F.
