Special Instructions

1.
Add all grains to mash tun.

Add 4 gal water @163 to be at 152.5 appx mash for 1 hr

Sparge 4.5 gal water @ 180F to get 165.5F Mash for 15min

Should get appx 6.5 gal of wort. Heat till boiling 60 min boil
5.
1st sign of boiling add 1oz KG hops (goldings) 60 min
6.
Irish Moss 15 min
7.
.50oz KG (goldings) 5 min
8.
cool wort to 78F pitch yeast
9.
Fermentation 1 week
10.
2nd Fermentation 1 week
11.
Bottle 1 week

    Okay I first want to say while I was gathering grains for this brew at a local brew store someone put some grains in my bucket not realizing it was already in use. That being said my recipe was already altered. I had a floating cake in my 1st fermintation. I have never seen this but after researching I came to the assumption it was not mold. I placed in 2nd fermintation and cold crashed before bottling. The end result is a good beer but there is a taste I can't quite put my finger on that is not a red beer flavor. Sooooo is it the other stuff that got added to my recipe? Not sure but, I would love any ideas on the floating cake, my friends have never heard of it. Happy Brewing To You All.

    My LHBS seemed busiest when I was using their grain mill. I broke down and bought my own and am happier for it. Hopefully your contributor just put 2-row in your bucket and the unexpected flavor was suspended yeast. I suspect the yeast clumped together and didn't drop to the bottom of your fermenter forming the suspended cake. No big deal if you were able to reach a decent FG. Cold crashing should have dropped the yeast out of suspension, but some may have remained when you bottled. Have you had the floating cake occur in any brews since this time? I wonder if inadequate aeration before pitching could cause this to happen. Cheers!

    You are probably right, because in the end, the beer tasted great. What is really funny is that all my friends and I decided it had a spice flavor like cloves. Which we loved, and as we were drinking it I realized I would never probably be able to recreate it. So we had to enjoy it while we had it! LOL

    The cake your describing happened to me as well twice. first time it was really uncomfortable to look at , looked almost like floating brains . Thought the batch was ruined. But beer turned out really well. Live and learn.
