Special Instructions

1.
Ferment at 62F – 72F with Irish Ale yeast until final gravity settles to 1.013.
2.
Transfer to secondary after about one week.
3.
After one-two weeks in the secondary, chill and rack the beer into a 5 gal serving keg.
4.
Carbonate to ~2.5 volumes of CO2 (moderate-high).
5.
Store the keg in a cold (36F – 50F) space to allow the beer to mature for three to six weeks before serving.
