Special Instructions

1.
Protein Rest = 2.5 gallons, 123F in mash tun
2.
Sacc Rest = Add 1.5 gallons, 163F - stir in gently
3.
After 60 min Sacc Rest, collect 1q of wort and recirculate through mash - repeat 5 times
4.
Empty wort into boil kettle
5.
Sparge = 1 gallon, 184F - 10 mins - recirculate 1qt 5 times
6.
Empty wort into kettle
7.
Sparge = 1 gallon, 174F - 10 mins - recirculate 1qt 5 times
8.
Empty wort into kettle
9.
Boil and add hops per schedule
10.
Add three cracked cardamom pods with the Saphir hops.
11.
Add Whirlfloc with Wai-iti hops
12.
Mix the FermFed in a small slurry of water and add to the wort just prior to pitching yeast
13.
Chill to 70F, aerate, add yeast nutrient, and pitch yeast
