Special Instructions

1.
Strike water: 4.5 gal @ 171F - target temp 156F for 60 minutes.
2.
Top off 1 gal @ 158F and stir gentle - do not foam
3.
Collect about 1qt of wort and recirculate in the mash gently (X5)
4.
Empty wort into kettle
5.
Sparge 2 gal of water @ 179F for 10 minutes
6.
Collect about 1qt of wort and recirculate in the mash gently (X5)
7.
Empty into kettle
8.
Sparge 2 gal of water @ 173F for 10 minutes
9.
Collect about 1qt of wort and recirculate in the mash gently (X5)
10.
Empty into kettle
11.
Boil 90 minutes and add hops to schedule. Add whirlfloc and Fermfed at 5 minutes.
12.
Chill to 53-55F - pitching temperature
13.
Pitch 2 packets of yeast (no need to aerate)
14.
Maintain 50-53F for 10 ten days
15.
Raise temperature to 58F for five days or until fermentation is complete
16.
Check gravity - needs to be below 1.024, prefereably between 1.016-1.014
17.
Move to secondary. Store at 32-35F for 8-12 weeks
18.
Bottle with bottling yeast and carb tablets to medium carbonation
19.
Allow 4 weeks at room temp to carbonate
20.
Chill below 42F for 4-6 weeks before drinking
